I discovered "The Annie" Breakfast Sandwich while reading a book by
Katherine Hall Page:
"The Body in the Sleigh". How could such an amazing recipe be "sandwiched" in between the pages of a book that brings you on a roller-coaster ride of emotional upheaval? Beats me, but it's in there! And, just like the ending of the book ends within peaceful moments of wrapped up tidiness so does this sandwich deliver peace; except, within messier bites.
The following recipe is taken from page 246 of the aforementioned book, and
Kyra Alex, of
Lily's House, in Stonington, Maine provided the author with it. The list of ingredients you'll need are as follows:
2 Large Eggs (Per Person)
1/4 Cup Crumbled Feta Cheese
1 Generous Handful of Loosely Packed Fresh Spinach (With Stems Removed)
Freshly Ground Pepper
Butter
2 Slices of Grilled or Toasted Sourdough Bread
2 Slices of Tomato (More, or Less, Dependent Upon Preference/Size of Your Tomatoes)
To Prepare:
"Beat the eggs and stir in the cheese, spinach, and a pinch of pepper.
Butter the bread and set aside on a warm plate.
Scramble the egg mixture in a nonstick frying pan.
Place the tomato slices on the bread
and mound the filling on top.
Serve immediately."
